I bought all of Professor Dario Bressanini’s cookbooks. In the book on vegetables I discovered the recipe for asparagus with clarified butter. It may not be the most diet-friendly recipe in the world but it is super tasty!
Asparagus cooked in clarified butter
- Preparation time: 20 minutes

- Ingredients
- 1 bunch of asparagus
- Clarified butter to taste
- 4 fresh eggs
- Salt and pepper to taste
- Instructions
- Wash the asparagus well. Remove the toughest part (about the third furthest from the tip).
- Use a potato peeler to clean the bottom part.
- Put the clarified butter in a non-stick pan on the stove to melt it. As soon as the butter has melted, place the asparagus in a row in a single layer. Put the pan back on the stove and cook with a lid for about five minutes.
- Turn the asparagus upside down and cook another five minutes. Add a little water if necessary.
- As soon as the asparagus start to have darker spots they are ready. Add salt and pepper.
- Serve the asparagus with fried eggs.
Tips to ensure the success of the dish:
- The asparagus must all have the same thickness
- I fry the eggs later in the same pan.
