This is a snack that I often ate in winter at my grandmother Irene’s house.
My grandmother used two Italian cooking books as culinary Bibles: The Talisman of Happiness or the Silver Spoon. Today, it is much easier to go to the web to look for a recipe. Times have changed, and first there were libraries with the volumes published in the house: the mythical encyclopedias. Today, instead, we search on Wikipedia.
When I have doubts about a process, I always pick up one of those books to see if it can answer my question, but the truth is that I trust them less than what I see on the web.

Fried apples

  • Ingredients for 4-6 servings
  • Difficulty: Easy recipe

  • Ingredients
  • 6  apples
  • 4 tablespoons of sugar
  • 1 small glass of Cognac
  • 1 lemon
  • Cinnamon to taste
  • Icing sugar to taste
  • Oil peanut seeds for frying to taste
  • For the batter
  • 4 ½ oz or 125 gr of flour
  • 2 tablespoons of oil
  • 2 egg whites whipped
  • 1 small glass of water at room temperature
  1. Instructions
  2. Peel the apples, remove the core with a digger, and cut them into thick rounds.
    Put the apple slices in a bowl and sprinkle them with sugar, lemon juice, and Cognac. Leave them to soak for an hour.
  3. Prepare the batter. In a bowl, mix the flour, oil, and water until it has a medium density with a creamy appearance. Let it rest for an hour in a warm environment.
  4. Put plenty of oil in a pan and place it on the heat.
  5. A few minutes before frying, pull the apples up from the marinade and let them drain. Mix the beaten egg whites in the batter and mix well. Then dip the apple slices in the batter and fry them. When they are just golden, remove them with the holey scoop and dry them on absorbent kitchen paper.
  6. Serve hot with cinnamon and icing sugar.

Tips to ensure the success of the dish:

  • The batter must be worked very little to prevent it from becoming elastic. Just mix the ingredients for a little while. Warm water should be used to allow it to absorb the flour.
  • Fry a few slices of apple at a time so as not to lower the oil temperature too much.
