I bought all of Professor Dario Bressanini’s cookbooks. In the book on vegetables I discovered the recipe for asparagus with clarified butter. It may not be the most diet-friendly recipe in the world but it is super tasty!

Asparagus cooked in clarified butter

  • Ingredients
  • 1 bunch of asparagus
  • Clarified butter to taste
  • 4 fresh eggs
  • Salt and pepper to taste
  1. Instructions
  2. Wash the asparagus well. Remove the toughest part (about the third furthest from the tip).
  3. Use a potato peeler to clean the bottom part.
  4. Put the clarified butter in a non-stick pan on the stove to melt it. As soon as the butter has melted, place the asparagus in a row in a single layer. Put the pan back on the stove and cook with a lid for about five minutes.
  5. Turn the asparagus upside down and cook another five minutes. Add a little water if necessary.
  6. As soon as the asparagus start to have darker spots they are ready. Add salt and pepper.
  7. Serve the asparagus with fried eggs.

Tips to ensure the success of the dish:

  • The asparagus must all have the same thickness
  • I fry the eggs later in the same pan.
