I love ice cream and as soon as I can I go to the ice cream shop to delight myself.
One thing I can no longer find are ice cream cups as they were made in the past: huge cups with ice cream mixed with fruit and whipped cream… they were also beautiful to look at.
In winter, especially during the Christmas holidays, after a sumptuous meal I like to serve ice cream cups.
This delicious cup is an old recipe by the great chef Escoffier which had a beautiful name: Clo Clo cup.
Clo Clo Cup

- 400 grams of vanilla ice cream
- 200 grams of marron glacé
- 150 grams of whipped cream (in the original recipe it is pink cream)
- ½ small glass of Maraschino
- Instructions
- Whip the cream.
- Break the marron glacé (except 4 for the final decoration) and leave them to macerate in the maraschino liqueur for at least thirty minutes.
- Fill the cups with ice cream. Pour over the marron glace with the liqueur.
- Decorate with whipped cream and the whole marron glacé.
Tipa to ensure the success of the dish:
- To whip the cream without having it turn into butter, the trick is to use a bowl previously left in the freezer for an hour.
- To make the pink whipped cream: clean 100 g of strawberries, cut them into wedges and then macerate them with 1 teaspoon of vanilla sugar. Use an immersion blender to make a coulis. Pass it through to remove the seeds and mix it with the whipped cream which in doing so turns pink.
