It is a soft and moist cake. Ideal for those who are on a diet but want a breakfast that is still somehow cheerful. I was amazed by how good it is. It makes my mornings breakfast less sad when on diet.
Apple and oat cake
- Preparation time: 20 minutes+oven
- For a 26x12 cm plum cake mold

- Ingredients
- 3 eggs
- 2 ripe apples
- 240 g of oat flakes
- 8 g of baking powder
- 1 tablespoon of cinnamon
- 70 g of warm water
- 50 g of raisins
- 50 g of dried cranberries
- Instructions
- Preheat the oven to 350 °F.
- In a cup of boiling water, soak the raisins and cranberries for ten minutes. Drain and squeeze well.
- Wash the apples well and cut them in slices.
- In a food processor, put the apples, warm water, cinnamon and mix everything well, add the egg yolks, oats and yeast and give another mix.
- In a bowl whip the egg whites until stiff and add them to the batter with a spatula, stirring gently so as to not dismantle everything. Add the blueberries and raisins and mix briefly.
- Pour the mixture into a plum cake pan lined with baking paper.
- Bake in the oven for about forty minutes.
Tips to ensure the success of the dish:
- The eggs should be at room temperature to whip better.
- The type of apple chosen will give more or less sweetness to the cake.
- If you prefer a less moist mixture, you can use a 24 cm round cake pan.
- The baking time in the oven is indicative because each oven cooks differently. If you are unsure, test with a toothpick: it should come out clean.
