This ice cream requires the use of an ice cream maker for a creamy and velvety texture.
Simple and quick to make, this is a perfect accompaniment for apple or strudel pies, for pears cooked in wine, or for baked peaches.
Since there are no specific ingredients for ice cream, such as dextrose or carob seed flour, it doesn’t keep very well in the freezer: it will become more frozen and less creamy. I’m honestly so greedy that I eat it all, just-made!

Old-time mother's Zabaglione (eggnog) ice cream

  • Ingredients
  • 5 yolks
  • 4 ½ oz (120 grams) of sugar
  • 0.1 quart (1 dl) of marsala liquor
  • 5 oz (160 grams) of semi-whipped cream
  1. Instructions
  2. Beat the 5 egg yolks with sugar in a steel saucepan. Continue whipping the cream in a bain-marie adding the marsala flush. The bain-marie is a cooking process in a container which is not in direct contact with the fire, but immersed in water kept at the desired temperature; in this case, a saucepan full of water.
  3. Turn off the heat and let it cool in a bowl filled with ice water, stirring constantly with the whisk.
  4. Whip the cream and add it to the eggnog with a spatula.
  5. Put the mixture in the ice cream maker and operate the ice cream maker for about thirty-five minutes.
  6. Keep in the refrigerator for 2 hours before serving.

Tips to ensure the success of the dish:

  • The water of the Zabaglione water bath must never reach a boil in order to not drive the cream crazy.
  • To whip the cream and not turn it into butter, a trick is to use a bowl previously left in the freezer for an hour. For ice cream and semifreddo, the cream must be semi-whipped and not completely whipped because it will lose volume.
  • Normally I prepare the frozen compounds first and leave them in the refrigerator for at least 12 hours before putting them in the ice cream maker. Ice cream is tastier, with more intense flavors and better amalgamations.
