This recipe is the main dish at almost every family dinner at my mother’s house, served with mashed potatoes, because my sister loves it.
It is very simple to make and delicious, perfect for a dinner with family or friends when you don’t want to spend too much time in the kitchen.
Mariana is an incredible cook, and when I make it at home, it turns out delicious, but never as good as hers.

Fillet of beef with an herb crust recipe

  • Ingredients
  • 1.5 kg of beef fillet
  • 2 bay leaves
  • A sprig of rosemary
  • 5 sage leaves
  • Coarse salt and pepper to taste
  • Extra virgin olive oil to taste
  • 2 garlic cloves
  1. Instructions
  2. Dry the meat with a kitchen towel.
  3. Chop the leaves on a cutting board with coarse salt and pepper, then blend them in a mortar and pestle until they become a coarse powder.
  4. Coat the fillet in the mixture on all sides.
  5. Place a pan with oil and garlic cloves over high heat. When it sizzles slightly, add the meat and turn it after three to four minutes. Repeat this process on all sides. Repeat this process a few times until the meat is well browned on the outside but not burned, for a total of about fifteen minutes.
  6. Remove the meat from the oven and let it rest, covered, for five minutes before carving and serving.

Tips to ensure the success of the dish:

  • Before cooking the meat, remove it from the refrigerator at least one hour in winter and twenty minutes in summer
  • After cooking, the meat must rest to absorb the juices properly, otherwise the first cut will result in an unsightly mess.
  • For those who prefer their meat medium, after carving each slice, you can quickly sear each slice in the same pan for one minute per side over high heat.
