This recipe is a classic of home cooking, simple and fast, and one of the dishes that I hated the most as a child and that I still do not like. I do not know if it is due to the bitterness given by the lemon or to the abundant chopped parsley that I abhor.
My mother, when I was still living with them, made it with an alarming constancy!
Piccatine with lemon
- Preparation time: 10 minutes
- Ingredients for 4 servings
- Difficulty: Easy recipe
- Ingredients
- 4 veal slice
- Extra virgin olive oil to taste
- 1 lemon
- 1 bunch of minced parsley
- 1 handful of desalted capers
- Flour to taste
- Salt and pepper to taste
- Instructions
- Beat the veal slices to make them thin.
- Flour them lightly and then put them in the hot pan with the oil.
- Sear the meat well over high heat on one side and then the other.
- Add the lemon juice, three tablespoons of water, and cook over lowheat for a few minutes.
- Season with salt and pepper. When cooked, add the chopped parsley and the desalted capers.
Tips to ensure the success of the dish:
- Always beat the meat to tenderize it. It is not an option.
- The flour must be light. It is necessary to flour the meat when it is not too moist or wet to avoid creating a layer of “breading.” For this reason, it is always advisable to pat the meat dry first with a paper towel.
- Always season after cooking.
